Peking de Gallo is a Chinese-Mexican Fusion fast-casual style restaurant modeled after Chipotle, Fusian, and Bibimbop. Since Chinese and Mexican food share many of the same staples in their ingredients, I thought this would be a very feasible combination. The branding derives from the friendship between a dragon and a rooster, creatures that are associated with Chinese and Mexican cultures. "Peking" (the former name of Beijing) and "de Gallo" a play on Pico de Gallo, the salsa who's name means 'Beak of the Rooster'
